Sirloin Steak Beef Marinade

Sirloin steak marinade prepared from dry red wine, steak sauce, orange slices, sliced green onion, finely chopped red chile pepper, minced garlic, ground ginger, coarse salt, and fresh ground black pepper. Steak prepared in your favorite style.

Ingredients -
2 cups Red Wine
1/2 cup Steak Sauce
3 Oranges, sliced into rounds
1 Bunch Green Onions, sliced
4 Small Red Chile Peppers, seeded and finely chopped
4 Large Cloves Garlic, minced
1-1/2 teaspoons Ground Ginger
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste
3 pounds Beef Sirloin Steak, boneless, cut across the grain into 1/4-inch strips
 
Preparation:

1. Combine the red wine and steak sauce in a large bowl.

2. Stir in the orange slices, green onions, chile peppers, garlic, and ginger.

3. Season with salt and pepper to taste.

4. Place the steak strips in a shallow dish and pour the marinade over the meat.

5. Cover, and refrigerate 8 hours.

Basting
Baste - to moisten foods while cooking by brushing with pan juices, butter, margarine, oil or a reserved marinade. Conventional thinking says that basting does nothing to moisten the meat, but it does add flavor.

Checking for Doneness
Don't be afraid to make a small cut into one steak to check for doneness. Although the steak will lose a bit of its juices, you can reserve this steak for yourself, while serving the uncut steaks to others. This will offer insight into how long you need to cook steaks for particular doneness on your stove or grill. After a few tries, your experience and intuition will govern the cooking time.
