Broiled Steak with Mushroom Wine Sauce

Boneless sirloin steak prepared under the broiler and topped with sauce mixture of sautéed thinly sliced mushrooms, finely chopped onion, all-purpose flour, chopped garlic combined with all-purpose flour, coarse salt, fresh ground black pepper, tomato paste, dry red wine, and water.

Ingredients -

2 tablespoons Sweet Unsalted Butter
1/4 pound Cremini Mushrooms, thinly sliced
2 tablespoons finely chopped White or Yellow Onion
2 teaspoons All-Purpose Flour
1 Garlic Clove, chopped
1/4 teaspoon Coarse Salt and Fresh Ground Black Pepper
2 tablespoons Tomato Paste
1/2 cup Dry Red Wine
1/4 cup Water
2 pounds Boneless Sirloin Steak

 
Preparation:

1. Melt the butter in a small saucepan over medium heat.

2. Add the vegetables, garlic and sauté until the onion is soft and translucent, stirring frequently.

3. Remove the pan from the heat.

4. Add the flour, salt, pepper and tomato paste.

5. Stir well to combine.

6. Blend in the wine and water.

7. Bring the mixture to a boil, frequently stirring.

8. Cover the pan.

9. Reduce the heat and simmer for 20 minutes.

10. Place the steaks on a broiler and cook to the desired doneness.

11. Pour the sauce over the steaks.

Cooking with Wine
In addition to enhancing flavor, cooking with wine has a health benefit. To cut down on the amount of fat needed in some recipes, substitute wine for part of the amount of oil called for in the recipe. Always choose a good wine; if a wine doesn’t taste good when you drink it, it won’t taste good when you cook with it.

Cooking Steak to Desired Doneness
A rare steak is pink throughout; it is cooked to an internal temperature of about 120 to 130 degrees F, and remains soft to the touch. A medium-rare steak is pink at the center and brown towards the very outer edges; it is cooked to an internal temperature between 130 and 135 degrees F. A medium steak is cooked to an internal temperature between 140 and 150 degrees. It is brown inside with a little pink at the innermost point. Medium-well cooked steaks are cooked between 155 and 165 degrees. They are firm with a hint of pink at the very center, although they are mostly brown inside. A well-done steak is cooked to at least 170 degrees. It is brown throughout and very firm.
