Bourbon Street Steak

Beef tenderloin coated in mix of bourbon, brown sugar, and fresh ground black pepper. Seasoned steaks are grilled over hot coals to desired doneness.

Ingredients -

2 Beef Tenderloin (Filet Mignon) Steaks (1-1/2 inches thick)
2 tablespoons Bourbon
2 tablespoons Brown Sugar
1/4 tablespoon Fresh Ground Black Pepper
Coarse Salt, to taste

 
Preparation:

1. Preheat the grill.

2. In a bowl, combine the bourbon, brown sugar and fresh ground black pepper.

3. Rub the spices all over the steaks.

4. Grill the steaks to desired doneness, 13 to 17 minutes for rare to medium.

5. Season to taste with salt.

6. Serve and enjoy.

Bring to Room Temperature
Before cooking your steak, let it come to room temperature. Remove from the refrigerator and allow it to rest on the counter under a dry cloth until no longer cold. This usually takes between thirty and sixty minutes. Pat dry. This ensures that your steak will not contract and become tough during the cooking process.

Aging is also important. The longer a steak has aged, the more tender it will be. Natural enzymes within a steak break down tough tissue during the aging process, as water evaporates, causing the flavor of the beef itself to become more pronounced. Purchase aged steaks from a reputable butcher, or research how to age steaks at home in your refrigerator.
