Beef and Broccoli Pepper Steak

Browned top round strips are combined with broccoli, thinly sliced bell pepper strips, thinly sliced onions. Steak and vegetables are tossed with beef flavor rice and served hot.

Ingredients -
1 tablespoon Butter
1 pound well trimmed Top Round Steak, cut into thin strips
1 (6.8 ounces) package Rice-a-Roni Beef Flavor Mix
2 cups Broccoli Florets
1/2 cup Red or Green Bell pepper strips
1 small Onion, thinly sliced
 
Preparation:

1. Melt the butter in a large skillet over medium heat.

2. Add the steak to the skillet and cook until browned.

3. Remove the meat from the skillet and set aside.

4. Prepare a box of rice-a-roni, as per package directions.

5. Add the meat, broccoli, pepper strips and onion to the rice and simmer for an additional 10 minutes or until most of the liquid has been absorbed and the vegetables are crisp tender.

Cooking beef to its proper temperature will help prevent bacteria such as E coli or salmonella. Ground beef should be cooked to 160 degrees Fahrenheit. Steaks and roasts should be cooked to 145 degrees Fahrenheit.

Premium cuts of beef include rib-eye, filet mignon, New York strip, and Porterhouse/T-bone. Lower quality cuts include flank, and top sirloin. These are leaner, less tender cuts that do well when marinated first.
