Asian Crockpot Steak

Asian style beef strips slow cooked with onion, garlic, bok choy, beef broth, soy sauce, and ground ginger. Tossed with cooked broccoli and served hot.
Ingredients -
1/2 tablespoon Olive Oil
1 pound Beef Round, cut into stir fry strips
1/4 cup Onion, chopped
1 Garlic Clove, minced
1 cup of Bok Choy, sliced or shredded
1-1/2 cups Beef Broth
1/4 cup Low-Sodium Soy Sauce
1/2 teaspoon Ground Ginger
1-1/2 tablespoons Cornstarch mixed in 1/2 cup Cold Water
2 cups Broccoli, cooked
 
Preparation:

1. Add olive oil to skillet. Heat over medium high heat.

2. Add beef round strips and sauté until no longer pink.

3. Add browned strips to crockpot.

4. Add onion, garlic clove, bok choy, beef broth, low-sodium soy sauce, and ground ginger to crockpot.

5. Cover and cook on LOW for 10 hours.

6. Transfer contents of crockpot to large skillet.

7. Bring to a boil over high heat. Reduce heat to low, add cornstarch mixture, and stir to thicken sauce.

8. Stir in cooked broccoli and serve.
